Vegan Mocha Coconut Brownies

Let's talk about veganism.

According to urban dictionary, a vegan is

'Someone who slaughters and kills fruit, and vegetables.'


The poor things never stood a chance..


My opinion of veganism? Indifferent.

If people want to just eat vegetables/fruit, that's totally their business. It's probably not very good for your health, but then a lot of us "non-vegans" eat A LOT of stuff which is REALLY bad for you.

I love all the meats.

All of them.


So, because being vegan is SO FASHIONABLE right now, I decided to do a vegan recipe.

It was delicious. 

If all vegan food tasted like this, I might consider being vegan.

LIES.


Go make these brownies and then go hug a cow, that's what vegans do right?


Vegan Mocha Coconut Brownies

Makes approx. 16 brownies.

Brownies:
2 cups Flour
2 cups Caster Sugar
3/4 cup Cocoa Powder
1 tsp Baking Powder
1 tsp Salt
1/2 cup Water
1 cup Coconut Milk
1/4 cup Sunflower or Olive Oil
1 tsp Vanilla Extract

To top Brownies:
1/2 cup Toasted Coconut
2 tsps Instant Coffee
2/3 cup Icing/Powdered Sugar
2 tsps Coconut Milk

Preheat the oven to 175 C or 350 F.

Grease a 9x13 inch tin and line the bottom with greaseproof paper.

In a large bowl, combine the flour, sugar, cocoa, baking powder and salt. Mix thoroughly. Pour in water, coconut milk, oil and vanilla. Stir with a wooden spoon until you have a smooth batter.

Pour the batter in the greased pan and spread evenly with a spoon or spatula.

Lick spoon and/or bowl.

Bake for 25 to 30 mins and allow to cool.

For the drizzle, put the instant coffee and powdered sugar in a bowl. Add the coconut milk a little a tsp at a time and mix thoroughly until you have a smooth glaze. If too thick, add more coconut milk. If it’s too runny, add more powdered sugar.

Spread over the top of the brownies with a spatula. Sprinkle with toasted coconut.

  2. I'm a vegetarian, but that's not fashionable anymore is is? I like your blog,it's down to earth. Sorry, I know that sounds naff, but it just is. A nice blog. Thanks for sharing the recipe. Moo X

  3. FYI, vegans don't just eat fruit and veg - they eat pasta, bread, cakes, tofu, lentils, rice, chickpeas, beans like kidney beans, dairy free chocolate, nuts, seeds... there's plenty to choose from, and if everything is eaten in moderation, it's actually the healthiest diet out there! :D

    Sorry, this became a bit ranty! You just seemed very dismissive of veganism and I wanted to prove that it's not all bad!

    Recipe looks great though, will definitely try out soon! :)

  4. To bottom line things-I do not have any allergies and am not on any veggie, gluten fee, low carb or special diet so all I have to worry about is that my taste buds like it! Food from any one of those special diets also can make my taste buds happy and your recipe looks like one that proves it. Yum!

  5. I have not hugged a cow lately, I hugged the dog (Cocoa)....but I don't think that counts. I do slaughter a lot of vegetables.....but I am not vegan....wish I could but that won't happen until they let vegan's eat cheese and butter and cheese slathered with butter and then topped with a little cream! That being said....this is a beautiful recipe that happens to be vegan and looks so delish that I will be making it soon. I am a nut for all things coconut milk and I imagine it is super yummy with cocoa (the powder, not my dog)!! :)

  6. @Moo, of course you get a hug, all the hugs. It's bloody FREEZING! It was so warm last week, I'm so upset, it was snowing here in Glasgow yesterday.

    @Freya, a couple of my friends are vegans. I think there is a big divide in vegans, you get some who don't take care of their bodies and eat mostly rubbish. But there are a large majority who eat lots of DELICIOUS things like chickpeas, pulses, wholegrains, seeds and so on. I <3 chickpeas, they're probably the best thing in the whole world.

    @Becky, I want to make a cocktail with coconut milk, any ideas? ;)
